This group has been a development that is finally ready to go out. I set out with these kitchen tools to try and make the best preforming, looking and economical chef knife I could for you, the consumer, and me, the maker.
52100 is one of the most AMAZING high carbon steels used in knifemaking today, and I couldn’t think of a better steel for a production model. Full flat grinds with and Appleseed edge means it will do just about anything you need it to do in any kitchen setting. With a long distal taper from handle to tip and the drop point to lose weight, this feels like a feather in the hand and does all the work for you. The handle is a frame construction of 2 types of micarta, a resin and synthetic based product that will last and take a beating (although you shouldn’t beat it on stuff).
With an overall length of 13” and blade length of 8.25” it won’t be overwhelming but can handle all of the small jobs too. Being a high carbon blade this will develop a beautiful patina overtime that will help prevent rusting or if you’d ever like it refinished and cleaned up all you’ve got to do is call.
